I wonder if that is the same thing I know of as Salpicon? If so, it is potato salad-like and also has carrots, peas, shredded chicken, and is made with lots of mayonaise.
My wife (a Cruceño) doesn't keep a recipe anywhere but in her head, but I found a recipe on this site that might be what you are after.
