There is a bolivian recipe here in providence and the best meat I ever tried was a dish they called keperi, not sure of the spelling, but can't figure out for the life of me how to cook it, or find anyone that knows. could you please post the recipe of give some info. thanks.

The cut you want is the brisket. You want some fat in it so it can render off while in the oven and then caramalize the fat to get a nice salty bite.

You need:
1/4 cup soy sauce
1/2 cup red wine
juice of 2 lemons
2tbs of ground cumin
1 tbs of pepper
1tbs of salt (soy sauce should be enough)

Blend all of the above together and apply to the brisket. Poke holes so the juices penetrate. Cook in oven for 3 hrs @ 350* cover with foil.

Tip: you can use a turkey bag to cook it in with the juices so it doesn't dry out. Just remove the bag 30 mins before completion. Broil fat side up for 15 mins or until golden and caramalized.

Necesito una colaboración con urgencia, yo soy Boliviana y vivo en Mexico deseo preparar un queperi al horno y no se el nombre del corte en Mexico, alquien me puede ayudar???¡¡¡¡ agradecere mucho por la ayuda

 ANOTHER RECIPE FOR KEPERI FROM LA RAZON 9-23-11

Keperí, sabor beniano. La Razón. Empieza por lavar bien el filete de res y córtalo del tamaño que desees a lo largo o en forma cuadrada. Deja cocer la carne en una olla con dos litros de agua caliente con sal, comino, pimienta, limón y soya. Mantén en el fuego lento durante una hora y media, hasta que quede suave y con poco jugo.

En una olla de presión coloca una taza de arroz popular con un litro de agua hirviendo y deja cocer por 15 minutos con un poco de sal y dos cucharitas de aceite.

Destapa y, al momento de servir, agrégale un poco de leche caliente y finalmente el queso rallado. Coloca la cebollita verde picada encima del arroz. Sirve el keperí acompañado de yuca cocida. Una opción consiste en agregarle al plato una ensalada de pepino y tomate. Si quieres hacer este platillo al horno, puedes rociar a la carne una mayor cantidad de salsa soya y mostaza antes de introducirla al horno para que le dé más sabor. Acompaña con la yuca cocida.

Ingredientes

1 taza de soya
2 litros de agua
Comino, pimienta y
sal a gusto
3 limones
1 ½ kilos de vacío
1 taza de arroz
¼ kilo de queso
2 tomates
2 pepinos
Yuca cocida a gusto
1/2 taza de leche

Keperi al horno: 5 personas, Más de 60' Medio Media: El Keperi o Queperí es un corte de carne propio de Bolivia y el norte de Argentina. Traten de encontrar el keperi en su país o alguno similar, pregunten al carnicero cual puede ser el corte del keperi boliviano y preparen al pie de la letra.

Ingredientes para Keperi al horno:

un keperi pequeño de 2 kilos
una papaya madura
un limón solo el jugo
vinagre maserado
salsa soya una copita
sal y pimienta a gusto

Cómo hacer Keperi al horno paso a paso:

Licuar la papaya y todos los condimento que quiera agregarle, licuar todo incluido la salsa soya y el vinagre; verter sobre el corte de Keperi y dejar reposar toda la noche en la heladera.
Al otro día sacar y llevar al horno como lo ha sacado de la heladera, así frío durante 2 horas a temperatura media.
Servir con arroz blanco y cualquier ensalada .

Hello Lucy from Rhode Island!

There are 2 presentations of Keperi in Santa Cruz, Bolivia: dry and in its own juice
(¨au jus¨).

Unfortunately, I can´t find a recipie for it anywhere either!

According to my highly UNscientific analysis of Keperi, I can tell you that it is roast beef, prime rib, if you have the extra $$$$$´s.

I AM NOT A COOK, but I think you could make the broth with beef rib boullion, white pepper, onion, garlic and currant jelly.

This is all I can offer you now, but I will keep searching...
