Which cut of meat is used for chicharron?

For chicharron, what cut of meat is used? I ask because every place I have had chicharron (minus bolivian) it is pork belly, which is not the same as I had growing up. Thanks!

Pork skin with the fat on
by: Anonymous

After three hours in the oven , I carve off the pork skin from the leg of pork and then render it down in a frying pan for another hour. Saw this on a show about columbian roof top party cooking. This never disappoints. I like to use fennel and star anise among other aromatics to add some complex flavours.
