Because of the historic Jewish influence on Crucenan cuisine, very few dishes mix dairy and meat. During the inquisition, the Jews were expelled from Spain, and many settled in South America, primarily in Santa Cruz. Though not necessarily kosher, many dishes reflect this part of the history of Santa Cruz.

Bolivia has no "rules" about such things. Not even informal ones. Eat what you want here.

I've never heard that here in Bolivia. What I have heard is that you should never eat pork and dairy together.
