Busco una receta boliviana - I'm looking for a Bolivian recipe

My late mother was from Bolivia, she used to make a side dish that was rather simple, but I loved it, it was Carrots with Eggs, she used to call something like "puchi de zanahoria", I am note sure of the name. By any chance would you know what it is?

Recetas Bolivianas: Phuti (Puti) de Zanahoria

Phuti (sometimes called Puti) de Zanahoria is basically scrambled eggs with carrots and red onions. It is very, very easy to make and very tasty. It is a Bolivian side dish, but some people eat the phuti as the main course and add sweet potatoes, potatoes, or corn as a side.

The word phuti (or puti) is an Andean culinary term, usually only heard in Bolivia. It refers to certain dishes that are chopped and scrambled. So if you were to make this dish, for example with plantains, it would be called plátano phuti. If you made it with chuños, it would be chuño phuti. Some phuti also include cheese, but carrot phuti usually doesn't.

Here goes:

INGREDIENTS

1/2 small red onion, minced
2 carrots, boiled until soft, then cubed
2-3 eggs
Salt (optional, to taste).

INSTRUCTIONS

Cook your carrots until they are soft, then chop them into small cubes. Set aside.

Chop the red onion very tiny (minced). Set aside.

In a frying pan, add 2-3 tablespoons of cooking oil. Add in the red onion, and cook it just a couple of minutes until it begins to turn transparent. Add in the eggs and scramble the eggs with the onion. Add in the previously cooked, diced carrots, and incorporate into the scrambled eggs. Cook just until the eggs are done. You can add salt, pepper or any other spices you want, but usually it's just made with salt.
