Aloo ki Bhujia - A Vegetarian Delight

Aloo ki Bhujia

Aloo ki Bhujia

Typical Indian or Pakistani Dish. Really easy to cook. Cooking and prep time top 30 mins.

Ingredients

1 Pound of potatoes
3 Mid size onion
4 Mid size tomatoes
1 Green pepper
1 Teaspoon fresh ginger (chopped)
1 Teaspoon fresh garlic (chopped)
Fresh chilies to your taste
3 Teaspoons cumin
1 Teaspoon cilantro powder
1 Teaspoon mustard seeds
½ Teaspoon oregano
Salt to taste

Preparation

Cut Onion in thin slices and fry until golden brown. Now remove onion from frying pan and set it aside. We will sprinkle it on the top at the end.

Now chop onion and fry until golden brown. Add 1 mid size chopped tomato. Add cumin, cilantro powder, fresh ginger, fresh garlic, mustard seeds, oregano, and fry for 5 minutes, until it turns into paste like.

Now add potatoes, add 2 cups of water and let it cook, until potatoes are somewhat soft.

Now add green pepper, large cut of tomatoes, green chilies and let it simmer for 5 minutes. Please don't overcook.

There... It’s all done.

You can serve it with some natural yogurt and lime on the side. And of course some rice.
