If you want somewhere closer you could take her into one of the nearby pretty gardens - like the Yvaga Guazu (doble vía a la Guardia), Rinconada (past the Colinas del Urubó), Guembé Butterfly Sanctuary and Orchidarium (also past Colinas del Urubó) or the Jardin Botanico (on the road to Cotoca). There are a lot of pretty places in Santa Cruz that double as romantic.

How about the waterfalls at Cuevas? It's about 1 and 1/2 hours from Santa Cruz on the way to Samaipata. A beautiful taxi ride up into the foothills and really pretty waterfalls after a short hike. Great place for a romantic picnic lunch and nice cool weather. You could pop the question and some champagne.
