Hi Rodrigo, The Christmas bread is called Panetone. I don't know of a specific version of it that is served in Santa Cruz, but I do know the traditional recipe that is served all over Bolivia. Perhaps you are thinking of that version?
On January 4th I will feature the Panetone recipe in my Wacataya Wednesday post and show you where you can buy the special pan and/or paper used to form the traditional Panetone shape. I will post a link to the recipe here on 1/4/11. Chef Noly

That would be panetón. Would love a recipe for that. There must be something special about the way they make it that it's so moist and it doesn't dry out like regular bread.
