Bolivian Rice and Tuna Salad

This salad, although it's made with rice, is actually served cold and it's really tasty! It takes almost no time to make and is very healthy too. It makes a great single-course quick lunch. Here's what you'll need:

3 cups cooked long-grain rice
3 small cans of tunafish
2 cups of cooked diced carrots
2 cups of raw celery, diced tiny
2 cups of black raisins
2 cups of cooked or canned peas

Cook your 3 cups of rice in 6 cups of water with 1 teaspoon of salt. Meanwhile, cook your peas and carrots. Drain. Add all remaining ingredients and mix. Serve cool (or hot if you prefer!)
