Bolivian Red Bell Pepper Salad

This salad is very easy to make and is filled with nutrition and vitamins. It takes just 10-15 minutes to prepare. Because it also contains beets, it's best to make it just a few minutes before you're ready to eat otherwise the beets will turn the whole salad red. You'll need:
Peeled tomatoes, diced
Raw carrot, grated
Raw beets, grated
Red bell pepper, diced
Green onion tails, diced tiny
Mayonnaise and salt to taste
Mix all of these vegetables together except the beets and stir in any amount of mayonnaise you like as you would with a potato salad. Stir in the beets last. That way they won't turn your mayonnaise purple. Add salt to taste, if your mayo is low sodium.
