You should check out Rurrenabaque

Rurre a village in north Bolivia in Beni department. Is small and hot and growing to be mayor ecotourism destination.

Coroico, totally!

Coroico is a little town in the yungas north of La Paz. It's small and villagy but there are lots of outdoor things to do nearby.

Samaipata is adventurous and villagy

Samaipata. It's a little town in the foothills, only 3 hours from Santa Cruz, so you can come to the city any time you need anything, but it's got tons of places to hike and ride horses and it's along the Che Guevara tour route, plus there are lots of foreigners there but also really nice Bolivian families. It's got really nice weather but still warm enough to swim quite a few days of the year. Still small enough to feel villagy although it's sort of grown from a village to a town now.
